Trout Ceviche

Ceviche is basically very fresh fish or shell fish that is cooked in citrus juices and oils. Have you ever marinaded some shrimp or scollop's in some orange or lime juice only to find that after an hour or so they are almost white or have lost that clear color, it's being cooked. Give this or any Ceviche a try before you snub your nose at it.
