Reuben Casserole

Now you may think than learning how to make reuben casserole would take a lot of time and effort - but you couldn't be more wrong! Just follow this helpful little recipe and see just how easy it can be.

Serves: 6 servings
Cooking Time: 12 minutes

Ingredients
17 ½ oz swiss cheese; shredded
4 1⁄3 oz mayonnaise
8 ¾ oz sauerkraut
2 tsp butter
8 ¾ oz corned beef; chopped, 12 oz
1 ¾ oz thousand island dressing or 0.2 cups mayonnaise & dash ketchup
2 tomatoes; sliced
1 green pepper; cut in rings
1 ¾ oz bread crumbs

Step 1: Prepare the Casserole

To begin, place the sauerkraut into a 1 and 1/2 inch deep buttered casserole dish. Now, top the sauerkraut with corned beef that has been broken into bits and cheese. Combine Thousand Island dressing and mayonnaise, or use a substitute of mayonnaise, ketchup, and relish, for 3/4 cup worth, which you can spread over the cheese before topping it with tomatoes or green peppers.

Step 2: Cook the Casserole

Now, spread the casserole with melted butter and bread crumbs and place it into the microwave. Cook the casserole for 12 minutes on (100%) HIGH. Remove from the microwave and serve up to six.
