Grilled Swordfish with Banana Papaya Salsa

The flavorful salsa adds a hint of the tropics to this terrific dish, with Banana's and Papaya. Papaya by the wayare a good source of vitamin C, an important disease-fighting nutrient. A few things before even attempting this dish, EVERYTHING must be the freshes you can get, starting with the Swordfish. Nothing prefrozen will do or it just will not be the same. The fruit must also be as fresh as the fish. Take one afternoon this summer and go shopping and get everything and I will guarantee you will love the dish even if you are not a fish eater.


Ingredients
•6, 6 oz. portions of fresh swordfish
•4 tablespoons fresh basil, chopped
•2 lemons (with shaved lemon rind for marinade)
•Cracked black pepper to taste
•5 tablespoons olive oil
•Juice of the lemons while grilling
•Kosher or sea salt to taste while grilling

Banana Papaya Salsa:
•2 bananas, diced
•1 papaya, diced
•1 red bell pepper, diced
•1 green onion, minced
•¼ cup cilantro, chopped
•2 tablespoons ginger, minced
•2 tablespoons fresh orange juice
•2 tablespoons fresh lime juice
•2 tablespoons brown sugar
•2 tablespoons sweet Thai chili sauce
•1 teaspoon fish sauce

Preparation

Marinate the swordfish in all the ingredients except the lemon juice for at least 2 hours before grilling. Season the fish while grilling with the lemon juice and salt.

Banana Papaya Salsa:

Combine all ingredients and serve over fish.
